German is an early-maturing fennel variety suitable for growing both for greens and spices. The plant is compact with good foliage coverage, reaching a height of up to 70 cm. Leaves are dark green with a bluish tint, tender, long, and large, possessing a strong spicy aroma that is retained for a long time after cutting. Due to high aromaticity, German fennel greens are widely used in cooking and are also suitable for drying, freezing, preparing seasonings, pickling, and marinating.
The variety is characterized by high yield: for greens it ranges from 1.4 to 3.1 kg per square meter, and for spices from 2.9 to 5.7 kg per square meter. Sowing is done in open ground at the end of April – beginning of May, with subsequent repeated sowings every 10-14 days to ensure continuous green collection. After cutting, plants regrow quickly, allowing fresh greens to be obtained throughout the season.
German fennel differs in late formation of umbels with seeds, which prolongs the period of green collection. Young leaves are used fresh, as well as in dried and frozen states. This variety is valued for high-quality greens and stable yield, making it an excellent choice for growing both in open and protected ground.
