Description Domari
Domari lettuce chicory — an early-maturing leafy chicory type endive, developed by breeders of the Dutch company Enza Zaden. This variety is highly adaptable to various growing conditions and is recommended for cultivation in all climatic zones of Ukraine. The plant forms a large, loose rosette up to 30 cm in diameter and weighing 300–400 g. The leaves of Domari are serrated, medium-sized, light green on the outside, and acquire a yellow-green hue closer to the center of the rosette. The plant withstands frosts down to -6°C and can be grown until the first snowfall, preferring moderate summer temperatures around +20–22°C.

Chicory Domari can be grown either by direct sowing of seeds into the ground or by transplanting seedlings. About 2–3 weeks before harvest, it is recommended to perform a whitening procedure on the leaves, which helps reduce their natural bitterness. To remove the mild pungency, the leaves can be soaked in salt water for 10–20 minutes.

Domari chicory is primarily consumed fresh, which preserves its delicate flavor and beneficial properties. Additionally, the leaves can be used in cooked dishes, expanding the culinary applications of this salad plant. Due to its flavor qualities and adaptability to climatic conditions, the Domari variety is an excellent choice for cultivation both in open ground and under protected conditions.
