Honey mustard grass is a perennial herbaceous plant, distinguished by its high nectar yield and soil fertility. It blooms for about a month during spring and early summer, attracting bees with its golden-yellow aroma. The honey obtained from its flowers has a greenish-yellow hue and a pleasant but mild scent. Due to its high glucose content, the honey crystallizes quickly, making it unsuitable for wintering bees.
The plant reaches a height of 30 to 80 cm. The leaves on lower shoots are lyrate-pinnatifid with a large rounded-oval terminal lobe, while the upper ones are sessile, ovate, and crenate-fluted. The flowers are golden-yellow, fragrant, have four petals and one pistil; the inflorescences form dense racemes. The fruits are straight or bent pods, cylindrical, four-sided with veins, standing obliquely upwards.
Mustard grass adapts well to various soil and climatic conditions: it is a mesophyte, growing in partial shade on wet meadows, along rivers, on forest clearings, and even in places of excessive moisture. Seeds germinate at temperatures from 6 to 40 °C, optimally 18–20 °C, and develop rapidly both in summer and autumn. In the first year of life, only a rosette of leaves with a developed taproot is formed, while in subsequent years, each spring shoot begins a new cycle of flowering and fruiting.
The nectar yield of mustard grass varies from 50 to 150 kg/hectare depending on the soil and climate. Bees visit the plant almost all day, especially in the first half of the day, collecting nectar and pollen. Due to its drought and winter resistance, mustard grass is a valuable resource for beekeeping and agriculture.
