The crop is heat-loving and drought-tolerant, with an optimal growth temperature of 20-22°C, although photosynthesis occurs efficiently even at temperatures above 40°C. Sugar beet requires adequate moisture, especially during the intensive root growth period in July-August. Due to its well-developed root system capable of absorbing water from depths up to 2.5 meters, the plant tolerates drought well. Seeds germinate over a wide temperature range from +4 to 17°C, with germination time depending on temperature. In autumn, sugar beet withstands frosts down to -5°C, but lower temperatures may negatively affect sugar accumulation.
