MERCIŞOR

Fennel «Mercişor» is an annual plant with a branched bush up to 0.9 to 2 meters high and a fleshy spindle-shaped root. In July–August, large umbel-shaped inflorescences with golden flowers form on its stems.

For successful cultivation of fennel «Mercişor», choose a sunny plot with light loam or sandy-loam soil. The plant does not require special conditions: it tolerates light frosts but needs regular watering, feeding, and weeding. When planting, maintain a distance of 35 × 40 cm (depth 0.5–1 cm), and harvest begins in June and continues until October.

All parts of the plant are edible: greens can be cut when the bush height reaches 20–30 cm, preferably in the early morning or evening. Roots are harvested either whole or cut off at a height of 3 cm above the soil level; the remaining roots continue to grow and form new shoots. Fennel «Mercişor» has a spicy aroma and a sweet taste, making it a valuable ingredient in cuisine – from marinades and syrups to desserts and confectionery. Its leaves, resembling dill, add freshness to salads, soups, and other dishes.
