Fennel Aroma

Fennel «Aromat»: Selection Profile and Gastronomic Properties

The «Aromat» variety, developed by the Association for Vegetable Seed Production (Sortsemovoshch), is the result of dedicated breeding work by originators Zosim Vinogradov, Valentina Kononyhina, and Magomet Saryev. This cultivar belongs to the vegetable fennel category, cultivated for its dense, fleshy bulbous bases.

Biological and Taste Characteristics

The technical value of this variety lies in its balanced biochemical composition, which dictates its culinary versatility. Key indicators:

• Taste profile: A distinct sweetness complemented by a characteristic anise aroma. The essential oils present in the plant tissues ensure a persistent spicy profile even after heat treatment.
• Structure: Formation of a dense leaf rosette with a tender texture, which minimizes fibrousness when proper agrotechnical practices are maintained.

Agrotechnics and Application

As a product of specific regional breeding, the variety is adapted to local climatic conditions but requires strict adherence to lighting and moisture regimes. Fennel is a long-day crop; under excessive light and high temperatures, the plant is prone to premature bolting, making the timing of sowing a critical factor in the cultivation of «Aromat». This variety is highly suitable for both the restaurant industry and health-conscious consumers: high levels of antioxidants and dietary fiber make this vegetable an essential component of a balanced diet.
