Description IRMENKA
Pseudocereals (Fagopyrum esculentum) is an annual herbaceous plant reaching up to 70 cm in height. The stem is initially green and ribbed, gradually turning red, while heart-shaped triangular leaves are attached to short petioles. Flowering begins in June and continues until September, featuring club-shaped spikes with red or white flowers that emit an intense honey aroma, attracting bees and other pollinators. The fruits ripen in September-October and have a three-sided single-seeded shape with coloring ranging from brown to violet-black, depending on growing conditions.

Pseudocereals are a heat-loving crop requiring moderate temperature conditions (18-25 degrees) and sufficient rainfall, especially during flowering and fruit formation, when the plant consumes about half of its total moisture over its life cycle. For successful cultivation, light, crumbly soils and fields located near forest belts are preferred. An important element of agronomy is the application of phosphorus-potassium fertilizers in autumn and post-sowing top-dressing with complex fertilizers. To protect against diseases such as rot, spotting, ramularia, and false powdery mildew, as well as pests including the pseudocereal weevil and aphids, mechanical soil treatment and herbicides are used.

Pseudocereal groats, obtained from pseudocereal seeds, are a valuable food product with high protein content and essential amino acids necessary for the human body. It is rich in complex carbohydrates that are slowly digested, providing a prolonged feeling of satiety. Various types of groats are produced from pseudocereals, including whole grain (yadritsa), prodel, and flour. The groat production technology involves steaming pre-cleaned grains at a temperature not exceeding 40 degrees, preserving the product's beneficial properties. Pseudocereals are widely used in cooking for porridges, puddings, and other dishes, and are valued for their beneficial properties that aid digestion and reduce cholesterol levels.
