The aerial parts of the plant are harvested using a sharp blade, cutting approximately 10–15 centimeters above the ground. It is essential not to damage the base of the plant to ensure its survival for the next season.

Harvested material must be processed quickly to maintain quality. It should be spread out in a single layer in a dry, shaded area with good air movement to prevent the growth of mold during the initial drying stage.
