Summer borscht is sorrel, which grows quickly and is ready for harvesting just 35‑45 days after sowing seeds.

The plant looks like a small semi-erect rosette: the leaves are large, green, slightly wrinkled, and about 35–45 cm tall. The leaf tissue is juicy, and the taste is moderately sour, making it an excellent addition to salads and soups.

Summer borscht is easy to grow in a garden or plot: it requires standard conditions for sorrel, and you will get a yield of 4.7–5.6 kg per square meter after two cuts. This is a convenient option for both fresh consumption and canning.
