Primitivo is a red grape variety known for its early ripening, reflected in its name which translates as "early". This variety is characterized by dark skin and is used to produce rich, tannic, and aromatic wines with deep color, reminiscent of ink. Wines from Primitivo are distinguished by high alcohol content and a noticeable light bitterness, giving them a special character and structure.
The Primitivo variety has vigorous growth and high yield, as well as the ability to accumulate a significant amount of sugar, which allows for the creation of both dry and fortified dessert wines. Among the famous wines based on it are Primitivo di Manduria and the sweet version Dolce Naturale. Fortified options can reach an alcohol strength of up to 18%, making them particularly rich and expressive.
Primitivo is also known by synonyms such as Zinfandel, Crljenak Kaštelanski, Tribidrag, Primitivo, and Kratosia. This variety is widely used to produce various types of wines, including red wines and port wines, as well as blends with other varieties. Despite its susceptibility to berry shattering and rot, Primitivo adapts well to different growing conditions, making it popular among winemakers.
