Pino Fran is a grape variety originating from the Burgundy region of France, widely used for producing table wines and high-quality sparkling wines. This variety is characterized by weak vigor and upright shoots, as well as medium-sized leaves with a wide midlobe. Clusters can be small or medium-sized, with dark blue berries that give the wine its characteristic color and aroma. The yield of Pino Fran is moderate, and the variety possesses resistance to certain diseases, making it attractive to viticulturists when certain planting conditions are met. Pino Fran differs in technical characteristics important for winemaking: juice makes up about 75.5%, stems 4.6%, and skin and seeds 19.9%. The juice has medium sugar content at 21.4 g/100 ml and acidity of 7.7 g/l, which ensures a balanced taste and aromatic qualities. The grapes respond well to climatic conditions and soil features, especially in such regions as Cote d'Or, where optimal productivity and harvest quality are achieved. This grape variety is considered one of the oldest and most respected in Burgundy, deserving the title of king of grapes. Pino Fran is also known under the name Pino Negru or black Pinot. Wines made from this variety are distinguished by the subtlety of taste and a characteristic sparkling wine aroma. To obtain the best quality sparkling wine materials, earlier harvesting is recommended when sugar content in berries reaches 17-19% and acidity is 0.9-1%, which allows creating exquisite and balanced wines.
