Officially registered in Ukraine in 2026, the Cabernet Volos variety is the result of breeding efforts by the Institute of Applied Genomics (Istituto di Genomica Applicata). This interspecific hybrid is designed for growers seeking stable yields without excessive chemical intervention. Unlike traditional European varieties, this grape possesses high natural resistance to downy and powdery mildew, significantly simplifying vineyard management.

Technological Characteristics and Processing

The primary purpose of Cabernet Volos is professional and craft winemaking. It inherits the traditions of Cabernet Sauvignon, maintaining a mid-to-late ripening period. For the winemaker, this requires precise harvest planning to achieve the optimal balance of sugar and acidity.

• Wine Profile: The final product showcases the classic organoleptic profile of the Cabernet family. The glass reveals characteristic herbaceous notes complemented by vibrant red berry undertones.
