SVELTANKA is a variety of white mustard that is characterized by early maturation and diploid genetics. This crop is grown both for the production of edible oil and meal, and as a cover crop or green fodder. The vegetation period is 72 days, and the yield of green mass reaches 71.8 kg/ha. Seeds contain about 30.8% fat, which allows for a gross collection of fatty oil of approximately 4.41 kg/ha. The crop is resistant to cruciferous flea beetle, cruciferous blossom weevil, and bacterial blight.
White mustard seeds are rich in proteins, unsaturated fats, vitamins of the B group, as well as vitamins A, C, D and E. Among minerals, calcium, manganese, sodium, potassium, iron and zinc predominate. In addition, seeds contain essential oils and glycosides sinigrin and sinalbin, which give the product a characteristic aroma and taste.
In cooking, white mustard is used as a spice in the form of ground seeds or whole grains. It goes well with fresh salads of cabbage, tomatoes and cucumbers, and is also added to soups, vegetable dishes, legumes and cereals. Seeds are used when fermenting cabbage, preserving vegetables, and even as a coating for baking bread. Seeds can be pressed to extract useful oil, which is valued in baking, especially when making enriched dough. White mustard harmoniously goes well with turmeric, dill, bay leaf, caraway, clove, parsley and black pepper.
