Jerusalem artichoke variety 'Interest' is a perennial plant of the aster family, distinguished by its high yield and ease of cultivation. The tubers have a pear-like shape, white color, and small indented eyes; they are sweet and contain up to 20% inulin, making them a valuable source of fiber and prebiotics. The plant reaches a height of about 2.5 m, has a dense foliage cover of dark-green leaves and bright-yellow flower heads. Seeds do not form, and tubers retain their properties even after freezing.

Successful cultivation of 'Interest' requires loose, fertile soil with a neutral pH; the plant prefers moderate lighting – a few hours of direct rays and can grow on both the eastern and western sides. Air humidity is not critical: Jerusalem artichoke is drought-resistant and does not require frequent watering. The optimal growth temperature ranges from +18°C to +25°C. Planting is done according to a 60×60 cm scheme with a depth of about 10 cm, and it is recommended to soak the bulbs beforehand to improve their elasticity.

The benefits of Jerusalem artichoke go beyond gastronomy: thanks to its high inulin content, it supports intestinal health and lowers cholesterol levels; potassium and magnesium strengthen the cardiovascular system, while vitamins C and B support immunity. Tubers can be eaten raw, boiled, baked, or used to make soups and purées – it is important to limit portions to 50–100 g to avoid bloating. Jerusalem artichoke is also valued as animal feed: it increases milk production in cows and improves the quality of pork. Due to its nutritional value and ecological resilience, it is becoming a popular choice among gardeners and farmers seeking a healthy and economically viable harvest.
