SEASONAL DELICACY – a biennial vegetable and medicinal plant from the Asteraceae family, which in the first year forms a characteristic rosette of leaves and a large root vegetable. The root has a cylindrical shape, 30–40 cm long, 3–4 cm in diameter, and weighs 100–150 g. Its black skin provides a bright contrast to the white, tender, sweet flesh inside.
The leaves and roots of this plant have useful properties: they are recommended for vitamin deficiency, anemia, atherosclerosis, diabetes, and obesity. Due to the content of vitamins and microelements, the product promotes metabolic activation and immune system strengthening.
Young rosette leaves can be used in fresh salads, adding a light crunchy texture to dishes. Roots grown in the first year are suitable for raw consumption as well as for preparation: boiled, stewed, or fried dishes, as well as sides and soups. To obtain a harvest, the plant is sown in open ground at a depth of 2–3 cm in early spring (April), after which it is harvested in autumn.
