Two-rowed cress – a perennial plant of the cabbage family, often called rocket or rocket salad. Leaves are bright green, with red veins and serrated edges, possessing aromaticity and a sharp, nutty-mustard flavor. The plant sprouts quickly: the first leaves appear as early as 25–30 days after sowing, and the rosette height reaches 20–22 cm.
Two-rowed cress is unpretentious and frost-hardy; it can be grown both in open ground and in greenhouses. The ideal temperature regime for intensive growth is +16‑18 °C, but the plant withstands lower temperatures thanks to its perennial nature. The yield of greens is 1.5–2.5 kg/m² with proper care; from one square meter you can collect from 1 to 1.5 kg of fresh greens.
In cooking, the plant is used in salads, as a side dish to meat and fish dishes, and is also added to pizza, pasta, spaghetti, and baked dishes. Young leaves can be cut selectively to extend the harvest period; flowers are used to decorate and flavor dishes. Two-rowed cress is rich in vitamins (A, B, C, E), micro- and macroelements, making it a valuable addition to a healthy diet.
