Coriander, also known as "French parsley", is an annual herbaceous plant with delicate, lacy leaves and a gentle aroma reminiscent of a blend of anise, fennel, tarragon, and caraway. Coriander leaves are often used fresh as a spicy seasoning: they enhance the flavor of other herbs, add a light sweetness and distinctive scent to dishes. In classic French cuisine, coriander is part of the aromatic herb mix "provençal" and is widely used in soups, salads, meat and fish dishes, as well as for flavoring vinegars and sauces.

Coriander grows easily both in open ground and in home conditions. Seeds are sown from March to June at a temperature of 18–24 °C and moderate soil moisture; the plant grows quickly – the first leaves can be harvested as early as 35–40 days, and a full harvest is achieved by the 56–65th day after sowing. Coriander prefers semi-shade or a light place with a good drainage system and does not require intensive care. For winter indoor growing, a bright windowsill is sufficient: the plant remains active even at low temperatures, making it one of the few herbs suitable for year-round use.

It is not recommended to dry coriander leaves – they lose their aroma and nutritional properties. Therefore, it is best to consume the product fresh, chopped just before serving, to retain all the spice. Root forms of the plant resemble parsley in appearance but have a delicate anise scent and high vitamin content; they can be prepared for winter and used in salads or as an addition to dishes.

Coriander is valued not only for its culinary qualities. It is rich in vitamin C, contains carotene, minerals and essential oils that improve the function of the liver, kidneys and respiratory system. In folk medicine, infusions are prepared from the leaves for weight loss and strengthening the body. Due to its scent, coriander is also used as a natural insect repellent.

Thus, coriander is a universal aromatic herb, easily grown in home conditions, suitable both for everyday cuisine and for gastronomic experiments. Its fresh leaves add dishes an exquisite taste, while roots open up new possibilities for preparing healthy and nutritious dishes.
