Chufa, also known as earth almond, is a perennial herbaceous plant of the sedge family. The plant height ranges from 30 to 70 cm, and the root system is well-developed and branched, where numerous oval or slightly elongated tubers up to 1 cm wide and up to 3 cm long are formed. One plant can bear from 200 to 400 such tubers.
To grow chufa, seeds are usually sown at the end of April–beginning of May, following a planting scheme of 30×50 cm. After germination, the plant begins to bear fruit approximately 70 days later. The yield is 0.5 to 1.0 kg per square meter under sunny lighting and open ground.
