Bean ROCQUENCOURT

Culinary Potential of Rockencourt Beans

The 2025 variety, Rockencourt, is a complex hybrid bean characterized by a high-growing bush habit, specifically developed for high-quality culinary and processing yields. Due to the absence of fiber in the ventral suture, this variety is ideal for fresh consumption, maintaining a tender texture even after heat treatment.

Marketability and Processing

The narrow, yellow pods of medium length with a heart-shaped cross-section offer excellent market appeal. The lack of secondary coloration and the smooth surface make the product highly attractive for the fresh produce market. The dense structure of the pod makes it suitable for:

• Freezing: thanks to moderate thickness and the absence of coarse fibers, the product retains its shape and flavor after thawing.
• Canning: the variety holds its shape perfectly in marinades, maintaining an aesthetic appearance in jars.
• Culinary use: the tender texture allows for use in side dishes, salads, and soups without the need for prolonged pre-processing.

The variety demonstrates high operational efficiency: the non-climbing bush type facilitates mechanized harvesting, which is critical for large-scale commercial farms. The moderate intensity of hypocotyl coloration and balanced foliage development contribute to uniform pod ripening, simplifying logistics and ensuring the product reaches the market without quality loss.
