Microgreens are young vegetable and herb seedlings harvested one to three weeks after germination, picked right after the first true leaves appear above the initial seed leaves. Unlike sprouts, which are grown in water and eaten whole including roots, microgreens grow in soil or soil-free mediums, and only the stems and leaves are harvested and consumed. Growing your own microgreens at home brings remarkable benefits beyond fresh flavor.
