Gulyavnik "Ershovets" – an annual plant from the Brassicaceae family, valued for its versatility and beneficial properties. Unlike some other varieties, it quickly roots in sandy and fertile soils with neutral to slightly acidic pH, making it suitable for cultivation in various climatic conditions.
Young Gulyavnik leaves are widely used as a food product: they can be added to soups, salads, or used as a spice. Before consumption, the leaves are usually poured with boiling water and held for 3–5 minutes to soften the taste and remove possible bitter compounds. In addition, the leaf material has healing properties: infusions and decoctions from it are used as a diuretic, expectorant, and anti-inflammatory remedy for colds, bronchitis, gastritis, and other diseases.
The "Ershovets" variety is characterized by high productivity – leaf yield reaches 1.5–2.5 kg/m². It quickly grows to a height of about 70 cm, has a tap branched root system and upright stems. Flowers are gathered in spike-like racemes, and fruits are multi-seeded conical pods with brown seeds up to 2 mm long. Seeds can persist in the soil for up to five years, allowing their use as reserve seeding for subsequent plantings.
For successful cultivation, planting is recommended in April (over two to three terms) or in the late autumn from the end of August, avoiding mass flowering and ensuring timely harvesting of greens. The variety goes well with legumes, pumpkin crops, early potatoes, and tomatoes, and after its use the soil is enriched with organic matter, which increases its fertility for subsequent crops.
