Smokers are special appliances for preparing incredibly aromatic and tasty dishes. There are devices for cold and hot smoking. With such equipment, you can cook fish and meat, delighting yourself and your loved ones with something new and unusual. And if previously many people built smokers, now it is much easier and more practical to simply buy one.

Types of Smokers

All smokers can be divided into several types depending on different parameters. First of all, they are divided into professional and household. The first ones are distinguished by greater productivity, durability, and are suitable for continuous active use. But they are quite expensive, and in household conditions it is unlikely to be able to use their full potential. But household smokers are perfect for occasional use and home use.

Buy a home smoker in Ukraine can be of three types depending on the type of smoking:

  • Cold;
  • Hot;
  • Half-hot.

Hot smoking involves using hot smoke. The smoking process may last several hours. Everything depends on the product you are smoking. Usually, lean meat and fish are treated this way. Fatty varieties, of course, can also be subjected to hot smoking, but at the temperature, all the fat will melt. It is important to consider that products processed by this method have a short shelf life.

Cold smoking takes much more time. The process may last several days. Low-temperature smoke is used. The taste turns out completely different, and this way you can smoke any meat. And such products are stored much longer and better.

Half-hot smoking is something in between the first and second. It takes several hours, and the smoke temperature is about 40-60 degrees.

How to Choose a Smoker

First of all, you need to decide on the type of smoking you want to use. And this depends primarily on how much time you can allocate to the process. And, of course, how long you need to store the finished product.

Also, when choosing a model, it is important to pay attention to good ventilation. Ventilation openings regulate the temperature needed for smoking. And if ventilation is insufficient or too strong, the process may go off track.

The size of the smoker and the depth of the container also matter. To ensure that the products cook evenly and correctly, there must be enough space between them and the fuel. Otherwise, they will simply char, but not smoke properly.

It will also be useful to have a thermometer to avoid deviating from the thermal regime. A water trap is also not unnecessary, as it retains heat and smoke better than standard lids. Adjustable operating modes in modern models allow you to calmly set the required parameters not "by eye", but to maintain them throughout the smoking process. Any additional features that affect the operation of the smoker will be useful and will make the task easier.
