Ethylene, the natural ripening hormone, triggers a cascade of biochemical processes: chlorophyll degradation, cell wall softening, and increased respiration rates. The active ingredient, 1-methylcyclopropene (1-MCP), has a high affinity for ethylene receptors. It binds to them more effectively than ethylene itself, creating a temporary barrier that prevents the "ripening" signal from reaching the fruit tissues.
